pick a bean any bean burgers

  • 2 1/2 cups beans if canned 
    • rinse well if dried
    • prepare in your preferred method until soft 
  • 1/2 teaspoon fine-grain salt 
  • 1 onion, chopped 
  • 1 large lemon, zested and juiced 
  • 1 cup greens (blanched then chopped fine or food processed) 
  • 1 cup breadcrumbs (gluten free works perfectly well) 
  • 1 tablespoon ghee (or olive oil)
  1. mush everything but the breadcrumbs and ghee together (great time to give the kids a job in the kitchen) 
  2. add a 1/3 cup of the breadcrumbs 
  3. mush pat into patties 
  4. tap patties into remaining breadcrumbs on both sides and along the edges 
  5. fry patties in large pan with melted ghee OR
    1. place on parchment lined baking sheet and bake at 375 degree F until browned, about 15-20 mins OR
    2. put on sprayed grill and BBQ for about 5 minutes each side (yes, you can wrap them in greased aluminum foil and BBQ them that way too) 
  6. serve with salsa, avocado, cheese, etc.
